Freekeh (Terroirs du Liban)

Known as "green wheat," freekeh contains more protein, fiber, vitamins, and minerals than traditional grains.

Harvested from immature wheat ears, it is then roasted, giving it its characteristic slightly smoky flavor. It makes an excellent substitute for pasta and rice, as well as quinoa in salads.

Produced by a small rural women's cooperative in southern Lebanon.
