Orange Blossom Water (Seniatna)

In March, the Cap Bon region sees its bitter orange trees bloom. For 30 days, the blossoms appear gradually, prompting the pickers to return to the trees 3 to 4 times throughout the month.

Z'har, Tunisian for orange blossom water, which also means "luck," marks the beginning of spring and is known for its soothing properties.
