Fermented in concrete tanks with wild yeast. Moderate extraction techniques ensure gentle extraction of flavours and tannins, maintaining the wine's elegant and approachable character.

To preserve the wine's freshness and purity, aging takes place in concrete tanks, allowing the Cinsault to develop and evolve while retaining its inherent fruit-forward nature.

Fun fact:
Cinsault was introduced in Lebanon in the 19th century by French missionnaries arriving from Algeria and southern France and became the pioneering grape variety, contributing to the revival of Lebanese winemaking after a 400 years ban on winemaking during Ottoman occupation.
