Description
Zaatar (زعتر), known internationally as the most quintessential "Arab" spice blend, is a mix of wild thyme (zaatar), toasted sesame, sumac (not always) and salt. Families used to prepare their own zaatar blends, which is why there are so many regional variations. Some add a lot of sesame, others less, some add a lot of sumac, others none.
Even the main ingredient can vary regionally since zaatar (زعتر) does not describe one specific kind of thyme, but rather a family of wild thymes, some of them being more like oregano others closer to what we call thyme. Hence, even the actual plant that people refer to as zaatar is not the same across all regions.
Mix it with olive oil for a classic zaatar wa zeit ("zaatar and oil") and dip it with fresh flatbread, use it to top manqousheh (Levantine "pizza", eaten for breakfast), or use it to spice fish, salads, and anything you like. There's never too much zaatar.
This red zaatar with pomegranate molasses is milder, less zesty than the green one. Produced by a cooperative in Zgharta, northern Lebanon, its ingredients are grown there without the use of toxic products such as pesticides.
